Chicken and Biscuits

Have some leftover cooked chicken?

This is one of my family's favorite chicken meals. The drop biscuits are so simple to make and gives a complete meal in one pan. For vegetable,s I have used peas, corn, carrots,  broccoli - or a mix of several vegetables.

Chicken and Biscuits


2 cups chicken, cooked and chopped
2 cups frozen vegetables (I usually double the veggies.)
3 T butter
3 T flour
1 tsp salt
1/8 tsp pepper
2 cups water


Biscuits:
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 cup butter
1 egg
3/4 cup milk

Place chicken and vegetables in 9x13 casserole dish.
Heat butter in skillet; add flour, salt, and pepper. Stir to blend.
Add water; stir and simmer a few minutes. Pour over chicken.

For biscuits:
Mix together flour, baking powder and salt.
Cut in butter until coarsely blended.
Combine egg and milk. Stir into flour mixture.
Spoon over chicken and vegetables.
Bake at 425 for 20-25 minutes.

  4. I tried this and we really liked it. The only question I had is do the frozen vegetables need to be cooked first? I did cook them because I just wasn't sure. Delicious recipe. I was so thankful I had some leftover roast chicken so I could try it right away!

      If your frozen veggies are soft, there is not need to pre-cook, but you don't bake it long, so if they are very crunchy, I cook them first.
      For example, I never pre-cook peas or corn, but I may broccoli.
      You may also use fresh vegetables, and then I pre-cook them until they are just barely soft, except for peas, which we don't like mushy and do fine raw.

    2. Thanks so much Gina, I used probably 4 cups of frozen mixed vegetables and one of pearl onions. None of them turned out mushy, so I guess it was fine to precook.

  7. This is my *favorite* food! Only I make it with a full crust, and chedder cheese with the veggies. My mom always made chicken pot pie for my birthday. Now I have to do all the work (thanks for all those years, Mom!!!) myself, but it's SOOOOOO worth it!

  9. This was great! However, it tasted a little bland to me. I think next time I might try using cream of mushroom soup instead of the gravy or putting some garlic in the biscuits. I will definitely be making this again! Thank you!

  10. Update: put garlic salt in the gravy, 2 cloves of garlic in vegetable mixture, and 10 min before it was done, I put 1 tablespoon of butter on top of the biscuits and sprinkled on garlic salt. SO good! Verdict: garlic cloves were unnecessary, but the real difference was made by the butter and garlic salt on top. Made the biscuits a little more crispy and made the whole dish so much more flavorful! This is now on our favorites list along with your sourdough waffles and sourdough pizza crust.
