Apple Cake

There is so many apple cake recipes, but this is one of our favorites. The glaze on top adds a special touch.


Apple Cake
From Simply in Season

5 cups chopped apples
1 1/3 cup sugar (I cut back to only 1 cup)
1/2 cup oil
2 eggs
2 tsp vanilla
1 cup whole wheat flour
1 cup flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 cup nuts (optional)

Combine apples and sugar. In bowl, mix oil, eggs, and vanilla. Stir in dry ingredients. Add apples. Pour in greased 9x13 pan. Bake at 350 degrees for 50 minutes. (It only took my cake about 35 minutes.)

Topping (optional)

2/3 cup brown sugar
1/4 cup milk
1 T flour
1/3 cup powdered sugar

While cake bakes, heat brown sugar,  milk, and  flour until  boiling. Remove from heat, mix in  powdered sugar. Drizzle over hot cake.

  3. this looks great gina! i tried another apple cake a few days ago-the recipe called for 1 tbsp of cinnamon... and needless to say we couldn't eat it! :) i will definitely have to try this one, we still have tons of apples from picking in september!

  8. This looks so yummy! I'd love to see how to convert it to sugar-free, gluten free, and even dairy-free.

    I'm interested in your opinion of how to make those conversions in general.

  9. Fall is my favorite time of year, and APPLE food some of my absolute favorite eatings! I always have apple pie on my birthday instead of cake. I think I might have to make this yummy-looking recipe!

  10. Me to, going to bake this one! Got a huge basket of organic apples that I bought the other day that I can't eat because they're too hard for my gums. So this will be just the ticket for those hard things! I sure did want to use your apple recipe using the honey instead of splenda in it but I didn't have enough honey on hand today. :( I canned 8 pints of pears that was suppose to be jelly but it's syrup. lol But it will still be good on pancakes and biscuits this winter! ;)

  12. I have the cake in the oven right now but I'm a little worried about how it will turn out. There doesn't seem to be enough batter/dough for the apples. I double-checked and didn't seem to miss any ingredients.
