Peanut Butter Baked Oatmeal

Here is another version of baked oatmeal that is the current family favorite. We are a little crazy over anything peanut butter, and I like to think it adds some protein to our Sunday mornings.

Baked oatmeal makes great leftovers. Once upon a time, when there was just two of us, I made baked oatmeal on Saturday and we had enough for all weekend. We like it hot or cold and I even like it for a bedtime snack. Now, our children usually scrape the pan clean and don't give opportunity for leftovers.

Again, I'm sharing two versions, one that soaks the oatmeal the day before.



Peanut Butter Baked Oatmeal


3 cups quick oats
1/2 cup honey
1 cup milk
1/2 cup peanut butter
2 eggs
2 tsp baking powder
1 tsp salt

Mix all ingredients together and stir well. Spread in greased 9x13 pan. Bake at 375 for 20 minutes. Serve with milk.


Soaked Peanut Butter Baked Oatmeal


3 cups old fashioned rolled oats
1 1/2 cup milk
1 T yogurt, kefir, vinegar, or lemon juice
1/2 cup honey 
1/2 cup peanut butter
2 eggs
2 tsp baking powder
1 tsp salt

In the evening, mix oats, milk and whatever acid ingredient you prefer. Cover and allow to sit at room temperature overnight.

In the morning, mix all ingredients together and stir well. Spread in greased 9x13 pan. Bake at 375 for 20 minutes. Serve with milk.

  1. My children LOVE oatmeal but I have never tried baked oatmeal. I have one that doesn't PB so I think I'll start with your other recipe.

  2. This looks great. I have heard that beans are so good for you. Do you use beans? Any recipies you an share other than the typical baked beans or ham and bean soup. I would love to try some good bean recipies that are healthy as well.

  7. Oh, I can't wait to try this!! We love PB, but guess this time it will be with almond butter.:) My hubby picked that up instead of PB. I kinda can't wait to see what it tastes like!!
    I make baked oatmeal for our sunday morning breakfasts too!! N I often modified the recipe for a soaked, but this will be great to have a tried one that works. (Though I never had a problem with my others.)

  8. All the recipes for baked oatmeal that I've tried are way too sweet for me. But I *love* oatmeal, so I'm determined to find a baked oatmeal recipe I like! We all love peanut butter, so this one just might be a winner.

  9. Man you make it sound SOOO GOOD! NONE and I do mean NONE of my family here likes oatmeal. :( I have tried it over and over and over TRYING to acquire a taste for it because I know it's good for you. I just can't get passed the texture. I might have to try the oven baked one though because that one might not be liked boiled. lol I even filled it with apples and cinnamon one time thinking that would make it to where we could eat it. It always goes to waste when I cook it because we can't handle the texture.

  14. We eat baked oatmeal at least once a week and generally my children eat it well. I've been wanting to try the soaked version but wasn't remembering the night-before step. I finally remembered last night and I'd say it was a rounded success! My Son was sure I added extra sugar! :) I didn't! I used kefir and it seemed to really soften and mellow the flavor. I'll certainly be doing this more. (If I can get into the night-before habit!)

  15. I was a little timid about trying this recipe because I'm still new to this whole honey instead of sugar thing. haha This was great! I did sprinkle a small handful of chocolate chips on top because I'm a huge fan of Reese's. I do prefer baked oatmeal with cinnamon and raisins, but this was a great alternative! Thank you for sharing!
