Chocolate Chip Pumpkin Bars

A simple bar that met my family's approval. This recipe makes two 9x13 pans, one for now and one for the freezer. I like to bake more then one pan of bars or cakes at a time to save time and electricity. But these hardly made it to the freezer.

1 cup oil
1 3/4 cup sugar
4 eggs
2/3 cup water
2 cup pumpkin puree
1 1/2 cup flour
2 cup whole wheat flour
2 tsp soda
1 1/2 tsp salt
2 tsp cinnamon
1 1/2 tsp nutmeg
2 cup chocolate chips
1 cup chopped nuts

Mix oil and sugar. Add eggs, water, and pumpkin and mix well. Stir in dry ingredients. Pour into two 9x13 pans. Bake 5 minutes at 350 degrees. Sprinkle with chocolate chips and nuts. Continue baking for 30 minutes or until done.

  2. This looks good, was looking for something to make to take to our church potluck this Sunday, will make one pan with just the nuts on top for my husband and the other for church. Thanks for the great recipe.

  6. Just made these for the first time today, and, due to a scatter-brained moment, I discovered that if you halve everything in the recipe except for the flour and the soda, you will get some yummy chocolate chip pumpkin cake!
