Zucchini and Rice in a Pot

In the summer, my normally simple menus become even simpler. My favorite meals are those that can be cooked in one pot. This one passes the test of simplicity AND the children's taste buds. Plus another way to use all my zucchini!


Zucchini and Rice in a Pot


1 lb ground beef
1 large onion, chopped
1 green pepper, chopped
1 cup chopped carrots
1/2 cup brown rice
1 cup water
2 tsp salt
1/2 tsp garlic powder
1/4 tsp pepper
2 tsp Worcestershire sauce
4 cups chopped zucchini

In large pot, brown beef, onion, and pepper. Add carrots, rice, water, and seasonings. Simmer for 30 minutes. Add zucchini. Do not stir. Simmer for another 30 minutes. Serve with chopped tomatoes.

Variations:
Add salsa for some spice.
Tomatoes can be added at the beginning and cooked all together.
If using white rice, cooking time can be decreased to about 30 minutes and zucchini added at the beginning of the cooking time.

  2. You must have a lot of zucchini. I sure wish I did so I could try some of these yummy recipes. Mine just didn't do a thing. The plants were nice and full of flowers, but they just sat there, doing nothing. I think I got bad seeds. I just re planted some more yesterday though, so hopefully we might just get some by fall!

    I got my Freedom Ranger chicks yesterday! So far so good!

  4. Made this for dinner after church today. My husband thought it was the best rice he has had. I left the meat out as I was serving it with steak from the grill. This is a keeper for us! Thanks for sharing!!!
