Chicken Stoltzfus

A dreary like today calls for some comfort food. This recipe came from my mom who got it from a friend. It is inspired from Amish cooking.

Chicken Stoltzfus is a thick chicken gravy that is served over pastry that is baked crisp like a cracker. It reminds me of our other favorite chicken comfort food - chicken pie. But this may be even tastier since the pastry isn't soggy. 

The original recipe takes a whole chicken and makes enough to feed...an Amish size family. Making a big batch isn't a bad idea because the leftovers are great but I adapted the recipe for our family using leftover turkey and broth instead of a whole chicken.


Chicken Stoltzfus


4 T butter
1 small onion, chopped
1/2 cup flour
1 cup milk
1/8 cup fresh chopped parsley
1 qt cooked chicken
1 qt chicken broth
1 tsp salt
1/2 tsp pepper

Saute onion in butter. Add flour and milk and cook until thick. Add broth and seasonings and cook until slightly thickened. Add chicken. Serve over pastry. You may use your favorite pie crust recipe or the one below.



Pastry 


1/2 cup lard
1/2 cup butter
3 cups flour (I used half whole wheat.)
2 tsp salt
1/2 cup ice water

Mix flour, salt, lard, and butter until crumbly. Toss with water. Divide dough in half. Roll each half on a baking sheet to 1/8 inch thick. Cut into 1 inch squares. Prick with fork. Bake at 350 degrees for 12-15 minutes. Store in air tight container.

  4. For the pastry crust, if I didn't have lard, could I just substitute with butter? Looks so yummy! I'm going to have to try this recipe! I LOVE amish recipes!!! Blessings! Jamie

    Yes, you can use all butter or another type of shortening.

  6. Oh this looks yummy! Makes me think of chicken pot pie the way my mam-mam made it which is a PA Dutch way which is more like a stew/soup with home made dumplings/noodles in it.
