Beef Vegetable Soup


1 large roast, cooked and chopped
2 qt diced potatoes
6 sticks of celery, diced
6 raw tomatoes, diced
6 raw onions, diced
2 qt peas
2 qt lima beans
3 pt corn
3 qt green beans, cut
2 qt carrots, diced
1 qt tomato juice
4 qt beef broth
3 T salt
1/2 cup sugar
3 T parsley
2 tsp pepper

Partially cook any raw vegetables (except tomatoes) Canned or frozen vegetables need no preparation. Mix all ingredients together. Place in jars. Can for 50 minutes at 11 lb pressure. Makes 23 quarts.

  1. I made this soup yesterday for canning and it is VERY YUMMY! I think this is the BEST soup I have EVER made! Thank you Gina for sharing! I added more broth because I love the broth in soups. Plus I pressure canned it longer. My husband even likes it and he's not a soup person like I am. :) I WILL be doing this one again! I also made the Chicken Corn Soup to a couple weeks ago. I was missing a couple ingredients on this one yesterday though. But it still turned out awesome!

  2. I don't use a pressure cooker, was wondering how long to cold pack this soup in a canner?

    1. I don't recommend cold packing soup because high heat is needed to can vegetables and meat. Boiling water is not hot enough.

  4. I canned this one and the chicken soup one several years back and I like this one the best. The other one is good, but this one reminds me of a can soup I used to like. I know this one is much better for me than the can one was. :-) Thank you for sharing your recipes!!! Came back on here looking for this recipe because I want to can some more of it. Can you tell us about what pound your roast is please?

  5. I have heard not to home can vegetables that have already been store canned. Have you ever had an issue with that in this recipe?
