Fish Tacos

 


My dad takes my boys fishing in every spring. But never have they caught fish like this year. For the first time in his life, my dad has pulled out his limit on trout. And not just one day. 


I love how easy trout is to serve. I brushed them with a little olive oil and lemon juice, sprinkled with salt, and baked at 425 for about 15 minutes. The fillets then lifted off the bones easily. Yum!

Speaking of fish...

I'm always on the lookout for simple meals. On one of our visits to my sister-in-law's home, she made us fish tacos, and we gained a new family favorite.

I now try to keep the ingredients for fish tacos on hand at all times. This includes a pack of frozen white fish such as tilapia or whiting, a pack of fahita-size tortillas, and cabbage. There are lots of others ingredients that can be added to a fish taco, but these three ingredients are the basics for fish tacos at our house. 

With these ingredients on hand, I can put together a simple meal very quickly even if we were gone for the day. The fish is often vacummed packed in single packs which can quickly be thawed in hot water. I usually bake the fish in the oven because it is simpler, but sometimes I go to the extra work of breading and frying the fish. 

The cabbage can be chopped an eaten fresh, but my children love if I saute the cabbage in a bit of butter. 

Then I pull out any other ingredients that I have in the fridge that would go on a fish taco. Avacado, cheese, hot sauce, onion, tartar sauce. 


Layer it all in the tortillas and enjoy! It isn't fresh-caught trout, but it is always delicious. There are few meals that my children enjoy more.

  1. We eat fish tacos two ways. The first way is breaded and deep fried with hard taco shells, coleslaw and candied jalepenos. These are very expensive and I have only seen them at specialty shops but I have learned to make them and they are really easy. The candied combines a hot with sweet and we just love fish tacos this way. I recently tried fish tacos another way, cooking them more healthy in some garlic flavored coconut oil. My husband works at a grocery store and brings unusual things home sometimes. You could just use some garlic and oil. Then I season the fish good and we liked them on soft taco shells. Chris W.

  2. Stromboli is a meal we really enjoy! The crust recipe that I use doesn't need to rise very long, so that makes the process faster.

  3. Fish tacos sounds delish and we should try them! My husband took the children fishing 3 Saturdays in a row, so we ate fish for three Saturday suppers.

  4. One of my favorite quick recipes was given to my mom by a neighbor years ago. We call it Cornbread Enchiladas, though it really doesn't resemble an enchilada. You make fried cornbread patties and top them with leftover taco meat and all of the fixings you like. Yummy!

  5. We love fish tacos and often make a sauce of blended mayo, a few chipoltes in Adobo sauce, and lime juice to top them, my husband loves it as a dressing.

  6. Finding out that my husband & I are both diabetics, we can't eat a lot of our former favorites anymore, but we're adjusting to some new favorites. We're eating more salads now with either chicken or tuna & lots of veggies in them. God's blessings on you & your family, Gina! 🙏
