Mexican Rice


I was hoping to share some good deals on the Instant Pot on Amazon Prime Day, but they sold out so quickly that I didn't bother. This post contains affiliate links. 

I still use my Instant Pot often despite my initial reluctance to purchase one. Here is a recipe that I make nearly every week. I love that it always turns out perfectly.

Mexican Rice

2 cups chopped green pepper
2 cups chopped onion
1/2 cup butter
4 cups brown rice
6 cups water
1 tsp cumin
1 tsp oregano
2 tsp salt
2 tsp garlic powder
4 tsp chicken bouillion

Place all ingredients in Instant Pot. Cook on pressure cook on manual for 22 minutes. Allow to reduce pressure and serve.

I often cook this rice before leaving for church and just let it sit in the pot on warm until we get home.

If you don't have an Instant Pot, this recipe works well in a slow cooker for 4-6 hours. You may need to add a bit more water.

I usually serve this with a stir fry or baked fish or chicken. Usually we have some leftover rice which makes perfect fried rice for lunch the next day.

    Can you share what are the pros and cons of a normal pressure cooker and the instant pot? I have never used either one but after seeing a mennonite sister use a normal pressure cooker I am starting to think about adding one to my kitchen utensils...but I am not sure if to decide on an Instant Pot or preassure cooker...!

    Any thoughts would be appreciated

      I have used both a stove-top pressure cooker and the Instant Pot and for me the Instant Pot has been much easier. I like that I don't have to constantly adjust the stove temperature to keep the right pressure. I can set the pot and go read to my children or work in the garden or go to church and it automatically adjusts to the right temperature and stops when it is finished. The convenience has been worth it to me.

  2. Thanks for sharing this recipe. I do not have an instant pot so I really appreciate the fact that I can do this in a crockpot. We love rice of any kind and I have to say I had never thought of cooking it in a crockpot. I plan on making this very soon. Thanks again and God bless.

  3. I have a Presto pressure cooker I have used for over 40 years. I love it. But I relented and got a hot pot last year and now my pressure cooker is gathering dust. I absolutely love my hot pot and I don't know how I got along without it, so if that helps you decide?

  5. Would anything change if I used white rice?

    1. If you use white rice I think it would take a few minutes less cooking time. Check the directions that come with your pot.

  6. We love to make macaroni and cheese in the instant pot. Not only is it super fast and super easy, but you can dress it up easily with shrimp or chopped ham. There are a number of recipes on the web so I won’t bother mentioning one here. We still continue to pray for you and your family.

  7. Gina, that looks wonderful. I wonder what the changes would be for high altitude cooking...or would there be any since it's a pressure cooker...

  8. Rice is one of the things I use my instant pot for a lot, too. With little boys that aren't into spicy things, I often use broth with/instead of water for the liquid, add green beans or other canned beans, and some chopped meat (even dear balogna) and it's a one-dish lunch. Add cheese or seasonings for more flavor. I also like that I can finally cook a soft-boiled egg runny enough to suit my husband. (Add one cup of water and the eggs on a rack/basket, and cook 2 or 3 minutes on high pressure, quick release, and the yolk is runny but the white cooked. Hard-boiled eggs are also super easy, and nice to peel.)

  9. I had to come back to tell you how much I liked this recipe! It's perfect. I've had trouble getting the rice to water proportions right for Instant Pot cooking, but this nails it. :) Yummy spices too. I'll be making it again!
