Sadly my zucchini plant died, but a friend shared a couple with me so I was able to make a few favorite recipes.
This recipe is from Simply in Season. I love this cookbook as the recipes are just like I like to cook with seasonal produce and healthier ingredients like yogurt and whole wheat flour. This is one of the rare times I'm sharing a recipe with NO adaptions!
Plus, it won the favor of my family (probably because of the chocolate and sugar!) With these on the counter, Ed thinks he needs one before going to bed so that he gets enough vegetables for the day!
1 cup flour
3/4 cup whole wheat flour
1/3 cup cocoa
1/2 tsp baking soda
1/2 tsp salt
Combine in bowl.
1 egg
3/4 cup sugar
3/4 cup brown sugar
1/2 cup plain yogurt
1/2 cup oil
1 tsp vanilla
Combine in separate bowl and beat well.
2-3 cup shredded zucchini
Stir dry ingredients, zucchini and egg mixture together. Spread into greased 9x13 pan.
1/2 - 1 cup chocolate chips
1/2 cup nuts (optional)
Sprinkle on top of batter. Bake at 350 degrees for 35 minutes.

Here in northern New England, my zucchini plants are nice and healthy but not even a blossom is seen as yet. So I will have to wait to try these brownies, but they sound absolutely wonderful! Thanks for sharing. I will be trying these later in the season.

ReplyDeleteMy oldest daughter made these last night, oh my they were so good. We didn't have any chocolate chips, but sprinkled the top with crushed Heath bars and pecans. Wow! It actually reminded me of a chocolate lava cake. Thanks for sharing the recipe!

ReplyDeleteMmmmm! Zucchini never ceases to surprise me... some years I can plant 2 or 3 and get nothing and others just one keeps me picking like mad. Sorry to hear you lost yours but I am sure your neighbors/friends will be able to keep you up to your ears:)
ReplyDeleteI just made a chocolate chip zuchinni cake. It is a very similar recipe and ohhhh soooo good! Perhaps I will do a blog post about it next week. I have a lot more zuchinni's to harvest so I may have to give this a try.

I'll have to bookmark this recipe for when the zucchini explosion happens in my garden. I have made choc. zucchini cake, but not brownies and brownies are my husband's favorite.
ReplyDeleteI love this and will be making them when the zucchini starts coming in. I think I will make them with coconut oil, though for the added health benefits and maybe reduce the sugar- did you find they were too sweet or just right? It seems like a lot of sugar...

ReplyDeleteI think you could cut back on sugar. Though I found when I cut back the sugar too much you lose the brownie texture and it turns more like cake - which isn't all bad!
The coconut oil is a great idea. I do that too sometimes. But I tend to use more butter then anything.
Let me know if you do some changes!

It took me twice to get this right and I'm so glad I tried them a second time! These are a delicious cake-like brownie!
ReplyDeleteIn a "duh" moment, I neglected to extract the liquid from the zucchini so the first batch I made was very gummy. Baking it longer didn't help. I figured it was a liquid issue, so I squeezed the liquid out through my imitation cheesecloth real well and it all worked out this time. :D
For me these were just meh. They didn't taste like brownies and they definitely tasted like they were "healthy for you."
