I was so tired of the non-stick pans that flaked off "stuff" on my bread. I've also used glass pans. The type of pan will affect how long you bake. The stainless steel pans take longer and that has been some of my problem in under baking. <br /><br />Meredith -<br />I have never used dough enhancer but I have used several ingredients that enhance a dough. (Did that make sense?) Soy lecithin, vital gluten and vitamin C are ingredients that I've used to improve my bread.
